This week we are talking about Pots and Pans.

There are many types of pots and pans and many ways they are put together. Harold McGee (The Curious Cook) at the New York Times wanted to test the pans and determine the differences.

Some have non-stick coatings of various types and others are made of aluminum between stainless steel, cast iron or copper top-coated with stainless steel. Prices range between $25 and $480.

He observed the Benard-Marangoni convection which is were the oil migrates to the coolest sits on the bottom of the pan. So as you heat your pan, if everything heats evenly there is only one "lake". You will probably find more than one "lake". So what you do is turn the temperature down until you get one "lake" and start to cook. You will be cooking at a lower temperature but the pan will heat evenly. This helps to prevent sticking and burning.

As it turns out you can use this technique on any pan. So purchase the pan that you like and enjoy cooking.
